What is your favorite apple variety?
The days of the Red Delicious are over. We're living in a golden age of apples thanks to innovations, investment in long-term research and hobbyist apple lovers. What is your favorite variety of apple?

For eating from hand: Envy. It is crisp, pure white inside, and doesn't brown. Right balance of sweet and tart.
For applesauce: Pink Lady. No sweeteners need, the skin can be left in while cooking and in the final product, for extra nurition.
Fuji. really good.
I don't know which variety is it is but it's green and quite tart. I love organically grown, tart, crisp apples, not sweet or mushy ones. Perhaps someone can name the one I like. Thank you.
Honeycrisp
Winesap. Tough skin and hard to find, but full, rich taste.
Cosmic Crisp.
My current favorite is called Evercrisp. It's crisp and crunchy, as the name suggests, and sweet. The favorite is more complex than that of Honeycrisp, which I find sweet but otherwise kind of boring. My second choice, when I can't find Evercrisp, is Fuji.
